When You’re On Wheels, Mug Meals

Meals in mugs are all the rave right now! Especially when your kitchen space is limited, you have a family needing to be entertained, ready to get their hands dirty or you are short on time. Flipping your favorite recipes into mug meals will be your new go-to. Get creative in your space this camping season and get your family involved too! So for your next adventure, try some of our favorite recipes.

Breakfast

  • Blueberry Mugfin
    •  Ingredients
      • 4 tbsp. all-purpose flour  
      • ¼ tsp. baking powder
      • 2 ½ tsp. sugar
      • 3 tbsp. milk of choice
      • ½ tbsp. oil of choice
      • ¼ tsp. vanilla extract
      • 6-10 blueberries (depending on preference).
    • Directions:
      • Combine all ingredients but blueberries in mug and mix until smooth.
      • Stir in blueberries to batter. (Note: if you don’t stir into batter, they might burst open in your microwave).
      • Microwave for 1 minute.
      • If cake is not to your liking, continue heating in increments of 15 seconds.
      • Let cake cool for a few minutes before eating and enjoy!
  • French Toast in a Mug
    •  Ingredients:
      • 1 or 2 slices of bread (depending on size of mug)
      • 1 tbsp. butter or personal cooking alternative
      • 1 egg
      • 3 tbsp. milk of choice
      • Dash of cinnamon
      • Drop of vanilla extract
    • Directions:
      • Cube bread
      • Melt butter in cup for a few seconds in your microwave, move around cup to cover walls of mug and add cubed bread.
      • In a separate cup, combine and stir egg, milk, cinnamon and vanilla.
      • Pour liquid over bread while allowing all bread to be soaked.
      • Microwave for one minute and then increments of ten seconds until cooked to your liking.
      • Add syrup if desired and enjoy!

Entrees

  • Pizza in a Mug
    • Ingredients:
      • 4 tbsp. all-purpose flour
      • 1/8 tsp. baking powder
      • 1/16 tsp. baking soda
      • 1/8 tsp. salt
      • 3 tbsp. milk of choice
      • 1 tbsp. olive oil
      • 1 tbsp. marinara sauce
      • 1 tbsp. mozzarella cheese, shredded
      • 5 mini pepperoni
      • ½ tsp dried basil or oregano
    • Directions:
      • Mix flour, baking powder, baking soda and salt together in mug.
      • Add milk, oil, and mix.
      • Spoon the marinara sauce and spread on batter surface.
      • Sprinkle on cheese, pepperoni and dried herbs.
      • Microwave for 1 minute and 10 seconds – 1 minute and 20 seconds depending on watts) or until mixture rises up and toppings begin to bubble.
      • Remove, let sit for a minute and enjoy!
  • Bacon Cheddar Cheese Burger in a Mug
    • Ingredients:
      • 1 ½ lb. hamburger patty
      • 1 slice of bacon
      • 1 slide of cheese of choice
      • Toppings of choice: ketchup, mustard, pickles, lettuce, tomato, onion, etc.
    • Directions:
      • Nestle burger patty in bottom of mug.
      • Microwave for 3 minutes or until the middle is cooked all the way through.
      • Drain any excess fat/liquid.
      • Lay cheese and bacon on top of your burger along with your favorite toppings and condiments.
      • Enjoy!

Dessert

  • Cookies and Cream Cake in a Mug
    • Ingredients:
      • ¼ cup white chocolate chips
      • 3 tbsp. milk of choice
      • 4 tbsp. all-purpose flour
      • ¼ tsp. baking powder
      • ½ tbsp. oil of choice
      • 2 Oreo cookies
    • Directions:
      • Combine white chocolate chips and milk in your mug. Microwave for 30 seconds, mix until completely melted.
        • If after 30 seconds the chocolate is not melted, microwave in 10-second intervals to refrain from burning.
      • Add flour, baking powder and oi
        l and whisk until batter is smooth.
      • Using a fork, smash Oreos until small chunks and mix into batter.
      • Cook in microwave for 1 minute.
      • Let cool for 2-3 minutes and enjoy!
  • Apple Pie in a Mug
    • Ingredients:
      • ¾ cup all-purpose flour
      • ¼ cup sugar
      • ½ tsp. baking powder
      • ½ tsp. cinnamon
      • ½ cup milk of choice
      • 4 tbsp. butter, melted
      • 1 tsp vanilla extract
      • ½ cup apple pie filling
      • Optional toppings: whipped cream, ice cream, etc.
    • Directions:
      • In a small bowl, mix flour, sugar, baking powder and cinnamon together.
      • Add in milk, butter and vanilla and mix well in between each addition.
      • Add several spoons of batter to each mug and sprinkle with cinnamon sugar and add a scoop of apple pie filling
      • Alternate layers and end with cinnamon sugar.
      • Microwave for 1 ½ – 2 minutes for one mug or 2-3 minutes for two mugs.
      • Let cool for 2-3 minutes, add optional toppings and enjoy!

For Your Dogs

  • Pupcake in a Mug
    • Ingredients:
      • 2 tbsp. peanut butter
      • 4 tbsp. wheat flour
      • ½ tsp. baking powder
      • 4 tbsp. water
      • ½ tsp. vanilla extract
      • 2 tbsp. plain Greek yogurt
      • 1 tbsp. peanut butter
      • Optional: dry dog food
    • Directions:
      • Microwave peanut butter in bowl for 30 seconds or until it begins to melt.
      • Add flour, baking powder, water and vanilla extract to bowl and stir until combined.
      • Transfer the dough to a greased mug.
      • Microwave for 90 seconds.
      • Mix your frosting:
        • Combine Greek yogurt and peanut butter in a separate dish.
      • Frost while still warm, top with dry dog food (optional) and enjoy!
